Professor Pedro Fito received the Ph.D. degree in Chemical Engineering from University of Valencia (UV) and the National Price “Juan March Foundation”. in 1970.
Assistant Prof. (1970-75) and Full Professor (since 1975) at the Department of Food Technology in the Polytechnic University of Valencia (UPV).
Founder, and Head of the Food Technology Department (from 1975), and the Institute of Food Engineering for Development from 2000 (IIAD).
From 1986 to 1990 was founder and first Director of AINIA (Research Association of the Food Industry) in Valencia.
Professor Fito specializes in Food Engineering and more specifically in the relationships between the structure-properties-process related to real food and its role in food and processes design.
Professor Fito has participated in more than 84 national and international funded R&D projects.

Editorial board member of Special Issues of Journal of Food Engineering, Trends in Food Science and Technology, Journal of Food Chemistry, and of Meat Science.

Professor Fito has been the President of the Food Working Party (European Federation of Chemical Engineering), member of the Executive Committee of the International Association of Engineering and Food (IAEA-ICEF) and of the Working Group ―Food Quality and Manufacturing of the ‖ ―ETP Food for Life, member of some scientific international bodies like IUFoST, Food Working Party, CoFE, CyTED, etc.
Has been president of ten International Food Engineering Congresses.
Founder of CIBIA and FoodInnova Congresses.
Has been director of some 70 Ph D Thesis and author of some 540 papers (data from H-Scholar-Google; 540 papers, 6538 citations, h=44) and several (20) books.
Since 2011 nominated “Emeritus Professor” by the Polytechnic University of Valencia. In 2005 nominated Member of the Royal National Academy of Pharmacy
