Mauro Moresi is full professor of Food Unit Operations and Environmental Assessment in the Food Industry at the University of Tuscia and the chairman of the PhD Course on Science Technology and Biotechnology of Sustainability.
He was former chairman of SISTAL (Italian Society of Food Science and Technology); member of the Editorial Boards of J Food Eng, and Ital J Food Sci; Italian delegate at the Food Group (Eur. Federation of Chem. Engng).
His research activity has so far dealt with the development of fermentation, enzymatic, and membrane processes, assessment of the rheological behaviour of food liquid and gel systems and environmental impact of food choices and beverage production. He has so far published 208 papers in qualified journals.
